Morganna's Brain Dip
The lovely Morganna created this recipe to fill one of those novelty "brain" gelatin molds (like this one, from Anatomical). However, it's delicious in a less-disgusting form as well.

1 can tomato soup
2 packages of cream cheese
1 cup mayonnaise
1 cup each finely chopped celery and green onion
1/2-3/4 cups choped fresh parsley
1 package of Knox Gelatin dissolved in 1/3 cup hot water
2 cans crabmeat
2 cans baby shrimp
Cayenne to taste

Use mayonnaise to grease your brain mold. In a medium saucepan over medium heat, mix together all ingredients (except gelatin) and add spice to taste. Heat it until everything melts together and gets all bubbly, then add gelatin mixture. Stir well, pour into mold and refrigerate overnight.

Voila!! There's usually a little extra that won't fit in the mold so you can snack on this stuff while warm too!

Pumpkin Chip Cookies
Makes about 3 dozen.

1 1/2 cups butter softened
2 cups packed brown sugar
1 cup sugar
1 can (15 oz) solid-pack pumpkin
1 egg
1 tsp vanilla extract
4 cups flour
2 cups quick-cooking oats
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 cups (12 oz) semisweet chocolate chips

In mixing bowl cream butter and sugars. Beat in pumpkin, egg and vanilla. Combine dry ingredients. Gradually add to creamed mixture. Stir in chocolate chips. Drop by teasponnfuls about 2" apart on ungreased baking sheets. Bake at 350F for 10-12 minutes.
